A 16-table tasting venue in Bodrum Yalıkavak redesigned its menu using Mikla as a reference. Average check climbed from ₺1,480 to ₺1,850. What do Noma, Eleven Madison Park and Mikla actually share at the layout level?
White space and category limits
Three numeric rules show up consistently in starred menus. Across 12 menus we audited, deviation stayed under 5%.
- Minimum 60% white space: less than a third of the page is image or text.
- Maximum 7 items per category: prevents decision fatigue and supports premium pricing.
- Item name no more than 4 words: descriptors like "crispy sea bass, sumac, fresh mint" belong in a subline, not the title.
Price typography and the anchor effect
Mikla and Noma list prices without currency symbols, in the same point size as the dish name, right-aligned. Removing the ₺ or $ glyph makes the diner read the figure as "value" rather than "cost". Cornell's 2019 study found this drives an 8% lift in average check.
The second technique is anchoring: the most expensive dish sits in the first half of the menu, with the second-priciest just above. Guests reach for the second item — average spend rises without raising any price.
Story, sourcing and restricted language
At Eleven Madison Park each dish carries a three-word sourcing cue — farm, season or technique. Perceived quality rises and questions drop. One internal POS audit flagged a 40% decrease in menu questions to servers after this change.
Restricted language matters too. Words like "handmade", "chef's signature" or "explosion of flavour" don't appear in any starred menu we reviewed. Concrete supplier names or cook times replace them.
FAQ
Do these rules translate to a small bistro? Yes — the 5-7 item rule and white space discipline lift average check even in a 20-seat venue.
How do you keep typography on a QR menu? In the thMenu theme editor, equalise dish-name and price point sizes, drop the currency symbol.
Are dish photos essential? Most starred menus skip photography. Minimal typography carries the premium feel.
