Perplexity query volume doubled in 2026. Win AI citations with FAQ schema, Q&A markup, canonical anchors and recent timestamps — proven framework.

An 18 m² specialty coffee shop in Beyoğlu, Istanbul earned a Perplexity citation in 1 out of 5 answers for the query "Istanbul third wave coffee" within 90 days. The only change the owner made was restructuring the site around FAQ and Q&A schema. In 2026, Perplexity search volume doubled globally and AI engines now drive a measurable slice of restaurant discovery traffic.

The four signals Perplexity actually scores

Perplexity does not use a PageRank clone. It scores citations on source authority (Wikipedia, encyclopedic anchor, established media), freshness (90-day window preferred), structural readability (FAQ schema, Q&A blocks, clean heading hierarchy) and answer-shape fit (40-90 word answers extract cleanly).

In the Sahil Coffee case, three concrete changes drove the result: JSON-LD FAQPage schema for "Which beans do you use?"; a "Pairs well with" micro-Q&A under every menu item; and a visible last-updated timestamp refreshed monthly.

FAQ and Q&A schema template

thMenu's admin panel ships a FAQ generator that auto-produces 12 standard restaurant questions: reservations, hours, allergens, vegan options, parking, payment methods, table capacity, online ordering, kids menu, price range, dress code, transit access. Each ships with structured-data JSON-LD ready for crawl.

Important: Perplexity tends to skip answers under 40 words (too thin) and refuses to cite answers over 90 words (it paraphrases instead of attributing). The generator enforces this 40-90 word band automatically, and you can override per question if needed.

The Wikipedia anchor play

  • Internal-link to Wikipedia entries for your cuisine concept ("third wave coffee", "neapolitan pizza", "kaiseki")
  • Being cited by name in a newspaper that is itself a Wikipedia source raises citation odds by roughly 3.2x
  • Build one canonical fact page: concept, chef bio, opening date, menu lineage — Perplexity loves a single high-signal URL it can quote

FAQ

How long until I see citations? The Beyoğlu case took 87 days. Plan for 60-120 days; established sites with high domain authority can be cited in 30.

Which schemas matter most? FAQPage, Restaurant, Menu, LocalBusiness and Review. Stacking all five lifted citation rate 2.7x vs FAQPage alone in our 40-site test.

Same playbook for Gemini and ChatGPT? About 80% overlap. Gemini additionally weights Google Business Profile signals; ChatGPT needs a clean, crawl-friendly robots.txt. Optimize for all three together — the marginal cost is near zero.
